1. Pesto Chicken Florentine

2 tablespoons of olive oil
2 finely chopped garlic gloves
4 skinless, boneless chicken breasts
2 cups fresh spinach leaves
1 (4.5 ounces) package dry Alfredo sauce mix
2 tablespoons pesto
1 8oz package of penne pasta
1 tablespoon of grated Romano cheese
Over medium-high temperature, heat olive oil in a large skillet. Add chopped garlic and cook for 1 minute. Add chicken breasts and cook for 7-8 minutes on each side. When chicken is no longer pink on the inside, add spinach and cook 3-4 minutes.
Prepare the Alfredo sauce per package directions. Add pesto to the Alfredo sauce when the Alfredo finishes cooking and set the sauce aside.
Boil water in a large pot with added salt. Cook pasta until noodles reach desired texture. Rinse the noodles with cold water and drain them.
Top pasta noodles with chicken and spinach. Stir in the desired amount of Alfredo sauce. Mix the ingredients and sprinkle cheese over mixture. Enjoy!


2. Easy Apple Coleslaw

1 unpeeled red and Granny Smith apple (cored and chopped)
1 grated carrot
½ cup of finely chopped red bell pepper
2 finely chopped green onions
1/3 cup mayonnaise
1/3 cup of brown sugar
1 tablespoon of lemon juice
3 cups chopped cabbage
Combine all vegetables and fruit into a large bowl.
Mix mayonnaise, brown sugar, and lemon juice in a small bowl.
Pour small bowl dressing over large bowl ingredients.
Mix well and enjoy!


3. Japanese-Style Sesame Green Beans

1 tablespoon of canola oil
1 ½ teaspoon of sesame oil
1 pound of fresh, washed green beans
1 tablespoon soy sauce
1 tablespoon toasted sesame seeds
Pour canola and sesame oil in a hot skillet. Place green beans into skillet, stirring to evenly coat green beans with oil.
Cook green beans until slightly brown spots appear, approximately 10 minutes.
Remove green beans from heat. Add soy sauce and cover for approximately 5 minutes.
Place green beans on serving platter and sprinkle with toasted sesame seeds. Enjoy!


4. Easy Hummus

1 drained 15oz can of garbanzo beans (keep drained liquid)
2 ounces of sliced, fresh jalapeño pepper
½ teaspoon of ground cumin
2 tablespoons of lemon juice
3 minced garlic cloves
Mix all ingredients in a blender or food processor, including 1 tablespoon of leftover garbanzo bean liquid. For other flavors, add desired amounts of red pepper or jalapeño to taste
Blend until smooth.
Serve with chips and/or veggies!


5. Eggplant Tomato Bake

1 sliced eggplant (approximately ½ inch rounds)
1 sliced tomato
¼ cup of grated fat-free Parmesan cheese
Warm oven to 400 degrees F.
Coat a cookie sheet with non-stick spray, or spread with butter if preferred. Arrange eggplant slices on the cookie sheet and sprinkle the Parmesan cheese over them.
Lay a single slice of tomato over each and sprinkle Parmesan cheese over them.
Bake for 10 – 15 minutes and enjoy!
